'Easiest recipe out there. I use my Cajun Seasoning to give them a Soul food flair. Peel and quarter your potatoes and parboil them. In a large ovenproof dish, put 3 tablespoons of vegetable oil, and put in a hot oven for 115 minutes. Carefully take the dish out of the oven. Put three cut up cloves of garlic into the oil, and sprinkle a generous amount of Cajun seasoning into the dish. Next, shake the par boiled, drained potatoes in the pan they boiled in, and then carefully transfer to the oven proof dish. Next, roughly chop some fresh oregano, basil, thyme, rosemary, basil, whatever fragrant fresh herbs you like, and sprinkle them on top of the potatoes. Place back in the oven for 45 mins, remembering to turn them halfway through cooking.
