'Beef Stew made with leftovers from my Sunday roast. This is a quick, easy, and delicious dinner, that requires next to no effort, and zero stress. I used left over peas, carrots, potatoes, for the base. I added mushrooms, tomatoes, coriander / cilantro, onions, garlic, green peppers, salt and pepper. I cut up 3 steaks that I found in the freezer, but you could easily use stewing steak or any left over beef. I added water and a beef stock cube. Leave it in the oven (180 degrees / gas mark 4/ 350 degrees) for half an hour. Using flour and water, make a simple roux. I season m roux with salt and pepper. Put the stew on the stove top, over a medium heat while you stir in the roux to thicken. Place back in the oven for a further 20 mins. I added red wine at the end. This could be cooked over a longer period in a less hot oven.
