'This video shows how to make kuthiraivali curd rice & instant mango pickle at home easily. kuthiraivali / barnyard millet has high fiber, low carb. kuthiraivali / barnyard millet curd rice is a healthy lunch box idea for all. kuthiraivali / barnyard millet has low glycemic index, hence it is recommended in diabetic diet too. We can use millet in different variety of food items, like adai dosa, idly, Pongal, idiyappam, porridge and curd rice. Millets are good for our health. Instead of white rice we can use millets. Including millets in our daily food optimizes blood sugar level. METHOD: Soak one cup of kuthiraivali / barnyard millet in water for 3 hours. Drain the water and transfer it to a cooker. Add 3 cups of water for 1 cup kuthiraivali / barnyard millet. Add required salt and Cook till 4 whistles. After resting time mash it well. Add thick curd and mix it well. (add 1/2 cup of boiled milk if the curd is over fermented) FOR TEMPERING: Add mustard, urad dal, chopped ginger, green chilly, red chilly, curry leaves and asafoetida. Add everything with kuthiraivali rice. Mix it well. Now our healthy millet (kuthiraivali / barnyard millet) curd rice is ready to serve. Serving hot is better. INSTANT MANGO PICKLE: Cut the raw mango into small pieces and add required salt. Dry roast red chilly and fenugreek while grinding this add asafoetida powder. Add this pickle powder to mango and mix it. For tempering add gingerly oil, add mustard. Remove it from stove, let it cool for some time then add the same pickle powder. Add this to mango.
