The bacterium Clostridium botulinum is destroyed in low-acid foods when they are    processed at the correct time and pressure in pressure canners. Using boiling water canners for    these foods poses a real risk of botulism poisoning.     If Clostridium botulinum bacteria survive and grow inside a sealed jar of food, they can produce a    poisonous toxin. Even a taste of food containing this toxin can be fatal.\"  The risk appears to be reduced if you fry the meat for 3 min before serving or boil it for 10min.  and don\'t feed it to infants.   Our Human bodies have become less resistant to bacteria over the past 50 years so what was a lower risk a generation ago, is a higher risk now.   Please take the time to make an informed decision on this.   There is also a higher risk of problems at higher elevations,  so please look into that as well.
