'For the past couple of years, I’ve been running full speed ahead, not able to sit in what I’ve been building. I’ve recently been able to start appreciating some of that hard work. I\'m extremely grateful for the opportunity that Food Network gave me back in 2012 with The Lime Truck. Meeting Tyler Florence was definitely a pivotal moment in my career, and again today almost 10 years later on The Great Food Truck Race All-Stars. That’s part of the journey, as entrepreneurs, we need to be able to slow down enough to enjoy the ride as we go. This past week was a rollercoaster of emotions, missing my mom but knowing how much of an influence she has on who I am becoming today. We all have a lot to do and many opportunities to grow, but we shouldn’t let that stop us from appreciating where we are right now.
