'The peanut butter squid is the most fascinating dish to me from the anime, Shokugeki No Soma/ Food Wars. There are many delicious dishes in the world but it is not often that you come across a combination is truly disgusting. I thought about the combination. Is it very different from grilling squid at those bbq restaurants and dipping into your own dipping sauce like you do at Hai Di Lao? The 2 flavor profiles that I needed to negotiate were the briny, seafood-y smells from the squid and the sweetness of the peanut butter. Instantly, I knew I wanted to remove the sweetness. Sweet and savory is already a fine line to thread in usual cuisine and I don\'t need any more problems to solve. I did that by using an unsweetened peanut sesame sauce, the kind that you would see at hotpots dipping sauce counters. And then next is to char the squid intensely and cook it through so that you have a dominant smokiness to cover the brininess. It would also help to get fresh squids that have not been put out too long. Accent the whole dish with finely chopped spring onions and it becomes a dish that I\'m really quite happy with. I think it would go pretty well with some strong alcohol, maybe some sake. But, obviously with something so intense, it\'s not going to palatable to everyone.
