'Hotcakes are Filipino version of pancakes, eaten mostly as a breakfast or snacks. They’re thin and have that egg yellow color. Before serving, each hotcake with margarine or butter plus sprinkle of sugar on the top. They are popular street food in the Philippines to the fact that they’re very easy to make, delicious, and inexpensive. This hotcakes remind me of my childhood memories. Just to share with you guys I enjoy hotcakes with a hot milk in the morning, and hotcakes with sparkle or royal for my afternoon snack. I asked Ate for the recipe. Ingredients: 1 cup all purpose flour 1/4 tsp salt 1 tsp baking powder 1/4 cup white sugar 1 cup milk 2-3 large egg 1 tsb oliver oil or vegetable oil 1/4 yellow food color 1/4 cup butter of margaraine Instructions: ◾ In one medium bowl, mix flour, baking powder, salt, and sugar. ◾ Mix milk, egg, and vegetable oil in another mixing bowl. ◾ Add wet ingredients to dry ingredients and mix until well-combined. ◾ Add the yellow food color and mix into the butter. ◾ Lightly oil the pan with a cooking spray or some butter and adjust heat to medium low. ◾ Scoop 1/4 cup of the butter and drop onto the pan. Shake to spread it out in the pan. ◾ Cook for about 30 seconds or so until sides of hotcakes starts to pull out. ◾ Use a spatula to flip the other side and cook for another 30 seconds. ◾ Remove pancakes from pan. Spread butter or margarine on top and sprinkle with some sugar. ◾ Repeat steps 4-6 until batter is used up. ◾ Serve warm.'
