'How to make Momma Cherri\'s Pineapple Upside down cake'

'Sticky, moist, and delicious pineapple upside down cake. Make a candied sauce using butter, brown sugar, and the juice from one orange. Add the tinned pineapple and juice from the can to the sauce, and leave to simmer.  Make a basic sponge using eggs, sugar, butter, flour, coconut extract, and vanilla extract. Grease a cake tin, and dust with flour. Place the pineapple rings and candied sauce at the bottom of the tin. Top with the cake batter. Bake in a preheated oven - 180-200 degrees C 350 degrees F, gas mark 4, until the cake is cooked (a rounded knife inserted comes out clean),  usually about 25 -30 mins. Remove cake from the tin as soon as it comes out of the oven, otherwise the sugar from the candied sauce will set.
